  • Preparation: Combine flour, baking soda, salt, rosemary, and garlic. Mix in buttermilk to form dough. Shape into a round loaf, score the top, and bake at 425°F (220°C) for 30-35 minutes.

2. Minty Colcannon

  • Ingredients:

    • 4 large potatoes, peeled and diced

    • 4 cups kale, chopped

    • ½ cup fresh mint, chopped

    • ¼ cup butter

    • ½ cup milk

    • Salt and pepper to taste

  • Preparation: Boil potatoes until tender. Sauté kale lightly. Mash potatoes, stir in kale, mint, butter, and milk. Season with salt and pepper.

3. Parsley and Thyme Irish Stew

  • Ingredients:

    • 1 lb lamb or beef, cubed

    • 4 carrots, sliced

    • 3 potatoes, cubed

    • 1 onion, diced

    • 2 tbsp fresh parsley, chopped

    • 2 tsp fresh thyme leaves

    • 4 cups beef broth

    • Salt and pepper to taste

  • Preparation: Brown meat, add vegetables, herbs, and broth. Simmer gently for 1-2 hours until tender. Season to taste.

4. Dill and Chive Potato Pancakes

  • Ingredients:

    • 3 cups grated potatoes

    • ¼ cup fresh dill, finely chopped

    • 2 tbsp fresh chives, chopped

    • 1 egg

    • ¼ cup flour

    • Salt and pepper to taste

    • Oil for frying

  • Preparation: Mix ingredients into batter. Drop spoonfuls into hot oil, flatten, and fry until golden on both sides. Drain on paper towels.
